Cinnamon produced in Sri Lanka, erstwhile Ceylon and southern regions of India is the only “True” Cinnamon, scientifically and historically speaking. It is produced from the dried inner bark of the “Cinnamomum verum” plant. “True” Cinnamon is light/tan brown in color and has a woody aroma and a mild and sweet flavor. It is a premium quality spice that is extremely safe to use due to its low coumarin content, unlike its low-quality substitute – Cassia Cinnamon.
